Easter Dinner Options: Glazed Rainbow Carrots

Whether it’s the neon colored Peeps, the egg hunt, Aunt Gertrude or the celebratory meal itself, Easter can present difficult terrain to navigate. If you are trying to make better food choices for yourself or family looking ahead to an Easter gathering can be just plain overwhelming. Many of us throw up our hands in surrender because we simply can’t imagine better options to the old favorites.

It doesn’t have to be so hard. Don’t be afraid to change it up a little. There are so many great choices to add to your meal and your family may thank you!

The first and biggest decision is the main course. You really don’t HAVE to have ham (no matter what my husband says…) Whatever you choose, try to pick the best quality possible. If you choose a meat-based main course strive to find a pasture raised beef roast, leg of lamb or pork loin. There are many available in this area. Once that decision is made you can start to plan your side dishes. One of our family favorites is glazed carrots. I still have one child (the first-born) who is holding out on giving a thumbs up to cooked carrots, but I have faith she will eventually come around.

Carrots are great raw or cooked. Cooking carrots (as well as any veggie with lots of fiber) helps break down the fiber to become more digestible. Some of the top nutrients in carrots are vitamins A, B and C as well as Vitamin K and several minerals.

Also remember that Vitamins A, D, E and K are all fat soluble. In order for your body to utilized them you must eat some fat along with your carrots. No problem. We usually coat them with some heart healthy butter, ghee or coconut oil.

The recipe below is really very simple. If you can still find rainbow carrots this time of year, they would be a very pretty addition to your Easter table.

Glazed Rainbow Carrots
PREP TIME: 15 minutes
COOK TIME: 40 minutes
SERVES: 6

INGREDIENTS
2 pounds rainbow carrots, left whole or halved if large
2 tablespoons organic coconut oil, ghee or butter, warmed
1 teaspoon local honey, warmed
1 teaspoon ground ginger
1 teaspoon sea salt

1. Preheat your oven to 425 degrees. Place washed and dried carrots in a large mixing bowl and set aside.
2. In a small bowl, add the coconut oil, honey, ginger, and salt and. Whisk to combine. Pour over the carrots and mix until evenly coated.
3. Transfer to a large roasting dish. Place in oven and bake for 35–40 minutes, until just tender, making sure to stir once or twice while they cook.
4. Serve warm
NOTE: If you end up needing to multiply this recipe, don’t crowd your carrots too closely in one roasting dish, as they won’t brown evenly.

You can adjust any recipe for your food needs. Gluten can be removed. Dairy can be replaced. You can cook longer, use different fats to taste, or season with different spices. The key to success is your OWN creativity. Make it what YOU need it to be for you and your family.
